GALAXY COOKIE CRUMBLE BLONDIES



I am on a diet. This is usually okay if I'm baking, because as much as I love to bake cakes, I'm not the biggest fan of consuming them. Call me crazy, but i've always been weird like that. Me as a little kid at birthday parties snearing in the corner picking at left-over french fries while everyone 'mmmm's' and 'ooooooh's' at their giant pieces of cake smothered in frosting. yuck. This made he realise quite early that cake, although not my thing, was literally everyone else's. 



I am definitely more of a savoury person, but have a soft-spot for anything cookie, pastry, or involving chocolate chips. And will eat and pick at these types of things until I've consumed them all. I'll even hoard them at my nightstand and eat them when in bed. Thus my problem with my current baking adventure, Galaxy Cookie Crumble Blondies. I knew these were going to be a problem for me and my diet, but little did I know HOW big the problem would be! I decided to make them for my husband, thus why I picked his favorite chocolate bar. But after trying them (obviously a MUST! standard.) I have started to hoard them. Lord help me! Luckily I live in a house of 5 (Mother-in-law, Father-in-law, Brother-in-law, Husband, & Me,) so here's hoping they'll disappear quick! (but not really, i want to eat them!)


PS: If you're in America and wondering what the heck Galaxy Cookie Crumble chocolate is, I'm sorry to say, unless you get someone from the UK to send one to you or you visit and get one yourself, you may never know. I'd advise you use Cadbury chocolate, which can be found in your grocery store (i know it's there! i've seen it!) Because English chocolate KILLS American chocolate. seriously, it does, (hello! mini eggs? cream eggs? both belong to Cadbury) just. trust. me.



Galaxy Cookie Crumble Blondies
makes 16, gorgeous, blondies.

Ingredients

1 cup of plain flour
1/2 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
1 cup of light brown sugar
76g (1/3 cup) of melted unsalted butter
1 egg
1 tbsp of vanilla extract
238g (Two large bars) of Galaxy's Cookie Crumble chocolate, chopped
10 small squares of plain chocolate


Directions

  • Preheat oven to 170 degrees 
    Celsius (350 degrees Fahrenheit) and line a 8x8 baking pan with parchment paper (or spray with non-stick cooking spray.)
  • Mix together flour, baking powder, baking soda, & salt in a small bowl, set aside
  • Using a hand-mixer mix the sugar, melted butter, and vanilla together. Once combined add in egg and mix well.
  • Add in dry 
    ingredients in three parts, mixing well after each part.
  • Fold in chopped Galaxy Cookie Crumble chocolate.
  • Pour finished mixture in the ready 8x8 baking pan.
  • Bake for 25-30 minutes, until a toothpick comes out semi-clean, transfer to cooling rack to cool when done.
  • Once completely cooled, cut blondies into squares or shapes.
  • Melt plain chocolate, according to directions on pack until melted. (I used a microwave and 
    stirred after 15-second increments until melted.)
  • Using a fork or spoon drizzle melted chocolate over blondies.
  • -To Speed up the chocolate drying pop in the fridge or freezer for a few minutes.
